During the visit we'll uncover the Colosseum's dark 2,000 year history and gain restricted access to sites only accessible with accredited guides. During the experience we will offer you the wine that I produce in my organic farm, make with natural method. Wine will be served at mealtime. If you want to drink during the lesson you can buy some bottles at our shop before the class. You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. Explore the farm with ours kinds pets like truffle dogs, cat, chickens and pig (prosciuttina) and winery whit the owner winemaker and learn about the history of this 12th-century artisanal winery. Throughout the years, we have mastered different mosaic techniques, both traditional and modern. That is why you will find the studio full of original tools, sketches by famous Italian artists, and important mosaics masterpieces. The workshop will begin with an introduction to Roman mosaic technique and history. Afterwards, you will practice the principles of texture, composition and marble tile cutting to create your own mosaic to take home. It is fundamental to us to transfer the real techniques of Roman Mosaic craft. Therefore, your mosaic will be correct and based on Ancient mosaic rules. The final result is your own personal mosaic to take home that will be approximately 7” x 5”, weighing 14 oz. A master mosaicist will share important tips, and provide the assistance you need to ensure the best result. This is a full immersion work experience. You are going to work in an authentic mosaic studio and handle specific tools. For safety reasons, we recommend starting this experience from 12 years on.

We invite you to spend a relaxing day on our organic hilltop luxury farm in Tuscany, surrounded by vineyards and olive trees. For a day you will get away from the crowds, heat, noise and queues. Our experience starts in Florence Santa Maria Novella Central Station where you will meet and we will help you buy the train tickets to San Miniato. The train ride to San Miniato will take 40 minutes. Upon arrival, we'll walk around the estate so you can see our vineyard and olive grown. We'll visit the gardens to gather ingredients for our lunch, which we'll prepare together. You'll find out how traditional Tuscan cuisine is simple, fresh, and delicious. Depending on the season, we might pick grapes, olives, wild asparagus, wild herbs, or even hunt for prized white truffles in autumn. During lunch we will taste our red and rosé wine together with our extra virgin cold pressed olive oil. After lunch you're welcome to kick back in the garden, take a swim in our 20 meters infinity pool filled with salted water (the pool is open form May to September), or stroll up to see a remote little church. My family, my dog, Billo ,and I will guide you in truffle hunting in our beautiful woods in Chianti. Truffle hunting is an ancient tradition in Tuscany, and has only one rule—respect nature. For this reason, it will be necessary to conduct a small briefing before going into the woods, a sacred place for truffle hunters. During the hunt, I will tell you about the truffle, the magic of its traditions, its history, mythology, and uses in the kitchen. You will learn how to recognize and distinguish a good truffle from other fake "truffles" of inferior quality. After the hunt, we will return home for a scheduled lunch or dinner, based on fresh, real truffles and served with our own wine and extra virgin olive oil. We will show you how to clean truffles and prepare typical truffle recipes, such as crostini al tartufo, tagliatelle al tartufo, and more.

We have to wait for each one of you for 15 minutes so everyone can attend this experience. We will start officially once we are inside the Vatican Museums and finish at 1h 45 minutes exactly, so if the guide has shown up at 4:30 sharp. I will teach you how to make the real Italian pasta from scratch. We will make two italian traditional pastas: ravioli and fettuccine. In addition to making homemade pasta we will prepare different sauces: Tomato and basil, Amatriciana, Gricia, Butter and sage. I live in a 17° century building 50 meters close to Piazza Campo dei Fiori. I'll wait for you there, in one of the most ancient square of Rome to tell you welcome to this traditional experience. We'll have a short speach in my penthouse (with a 360 view of the Roma roofs) to break the ice and talk about roman cuisine, then I'll show you ingredients we'll need. Then the cooking class can begin! You will become a perfect italian chef in only 3 hours. When we are finished we will cook, eat, and savour our pasta together. I’ll tell you all the secrets for the italian handmade pasta and some tipa to replicate easy at home. Other things to note: We don't have a gluten free option, sorry. Capri Premium Tour Our exclusive tour of 8 hours starts from Sorrento at 9:30 AM sailing along the peninsula’s stunning coastline passing Marina Grande, Massa Lubrense and Mitigliano Bay , whilst enjoying a refreshing aperitif. The tour proceeds straight to Capri , where we will stop in the most breathtaking areas of the island like: Withe, Green and Blue Grotto,the Champagne and the Heart cave, the Faraglioni rocks and the Punta Carena lighthouse , Tiberio’s jump and Villa Malaparte. (Blue Grotto entrance is optional). After your guided tour around the island's coast we'll disembark at Marina Piccola of Capri , where you will have 4 hours of free time to spend on shore, enough to visit the famous Piazzetta and Anacapri . On the way back we will stop for a swim , providing you with snorkeling equipment. Our last stop before Sorrento at 5 pm will be in the fantastic Queen Giovanna’s Bath, surrounded by the ruins of the oldest Roman Villa of the coast.
